1 red bell pepper, stemmed, seeded and chopped

1 small onion, chopped (½ the whole of a large one)

3 small garlic cloves

3/4 teaspoon salt

3/8 teaspoon pepper (preferably fresh ground)

3 tablespoons fresh parsley, chopped (3 teaspoons makes one tablespoon)

Instructions:

1. Heat the oil in a skillet over medium heat.

2. Add the bell peppers, onions, garlic, salt and pepper and cook, stirring often, until the onions are golden brown--around 15 minutes.

3. Put these cooked ingredients in a food processor and puree. Poor into a serving bowl.

4. Stir in the parsley and, if needed, season with more salt and pepper to taste.

Here's a great way to use this sauce. This is real uncomplicated and delicious:

Just flatten out some plastic-wrap covered chicken breasts, using as mallet. You want them to be about 3/8 inch thick. Now, heat up some olive oil over medium heat in a skillet. I like to use extra virgin olive oil, but regular alive oil will do and is less expensive. The selection is yours.

Now place the flattened chicken pieces into the skillet to cook and sprinkle the chicken with a little garlic salt and pepper. When the first side is lightly browned turn them over to brown the other side, immediately smothering the chicken pieces with the bell pepper sauce. Now terminate cooking them. Please, please, please do not over cook the chicken...it will come out dry!

Remove the chicken and place it in a slave plate and ornament with a little parsley.

Now you have yourself a first class and delicious dish.

  • 1 holder of Oreo Cookies. Get the quarterly kind, not double stuff.
  • 1 - 8 oz holder of softened cream cheese. You can use quarterly or the reduced fat kind
  • Dipping chocolate. You can also melt milk chocolate or white chocolate chips for dipping, but the consistency of dipping chocolate is better.

To make the truffles, crush the Oreo's thoroughly until there are no chunks. I have found the easiest way to do this is to put a few at a time in the blender and turn it on high. I put the crushed cookies into a bowl and then crush a few more. This formula may take a slight longer, but the cookies are thoroughly crushed when I am done.

Now mix the crushed Oreo's with the softened cream cheese. I like to put the whole aggregate into my KitchenAid and then let it mix for a few minutes. Now, make small balls out of your cookie/cream cheese mixture. I like to use a cookie scoop or a melon ball scoop. This will give you an idea of how big to make the truffles. Set them on a cookie sheet and get ready to dip in the chocolate.

Now it is time to melt your chocolate. You can melt the chocolate using a double boiler on the stove or in the microwave. To melt in the microwave, use a glass bowl, microwave at half power in 30 second increments. Stir and do it again if the chocolate isn't thoroughly melted. When you take it out of the microwave to stir, this will melt a lot of the un-melted chunks. You don't want to cook it too long or it will become grainy and unfit for dipping.

Dip the truffle balls into the melted chocolate and set on a try lined with waxed paper to dry. Once they have set, drizzle white chocolate over them for a yummy and ornamental addition. Store the done truffles in the refrigerator.
